Maryland Lady Crab Cakes
Ingredients
2 medium crabs (2 crabs generally do 6 cakes)
3 cream crackers
1 large egg or 2 small eggs
For the jam:
1/4 tsp. black pepper
1 tbsp Worcestershire sauce
2 tbsp butter reduction
2 tbsp tarragon
4 tbsp vinegar
2 tbsp lemon juice
1 chopped tomato
In a bowl, mix egg, salt, pepper, mayonnaise, Worcestershire sauce and mustard.
Add about 1/4 cup bread crumbs.
Add crabmeat and mix.
Add remainder of bread crumbs and mix.
Cook cakes in fry pan, in just enough fat to prevent sticking, until browned, about 5 minutes on each side.
NOTE: If desired, crab cakes may be deep fried at 350 degrees, for 2 to 3 minutes, or until browned.
Makes 6 crab cakes
